This marinade is delicious on Grilled Swordfish (page 64) or eggplant.

MAKES: ½ cup
1 bunch cilantro, leaves only, finely chopped
juice of 1 lemon
3 cloves garlic, minced
½ cup olive oil
¼ tsp freshly ground black pepper
Mix all ingredients together.
